The Great Kitchen, dating from the 14th century and still in use for the preparation of banquets, was badly damaged in the 1992 fire. Large parts of the roof had been destroyed, but inspection revealed a framing of mediaeval roof timbers within 19th century softwood casings.
The Practice repaired the roof timbers, restored the 19th century Wyatville elm-topped tables and laid a new Purbeck stone floor. An unobtrusive lighting system was installed and new cooking equipment discreetly introduced.
